The Yelmen family's butchery dates to Fuat Yelmen's own farms in Foça; son Serhat brought the craft to a historic house in Ilıca, where cuts are dry-aged in a glass counter and grilled to order on a terrace out back. Marinated ribeye with a crisp fat cap and burgers in house-made buns are the draws, and the bill tends to be more honest than much of Çeşme. It sits on the Michelin Guide's Selected list for exactly this transparency of product.
