Sherry list is the spine, the jamón ibérico de bellota is sliced to order, the croquetas and the tortilla and the grilled prawns run on a loop. Sister room Pizarro (proper restaurant) sits forty metres up the street for the booking; the bar itself is the Tuesday-evening walk-in that the audience that has eaten at Sala de Despiece in Madrid keeps as London's nearest equivalent.
