Chef Quentin Guillaume's plates are seasonal, organic-led and built around the bottles. Sommelier Enzo runs Sunday-evening tastings on a rotating regional theme. Bottles bought to drink in carry a 30% discount off shelf price. For a visitor who wants the natural-wine immersion that the Septime-Cave / Buvette tier suggests but with a fuller list and a less-touristed room, this is the address.
