Attached to the Hotel Daniel just across the river, Cocchi has been the city's bourgeois canteen since 1925 and is the place to grasp Parma's Food Valley properly. An accurate selection of cured meats and extra-aged Parmigiano Reggiano opens the meal; the carrello dei bolliti is the dish to order, wheeled tableside in the old style. Polished but unstuffy.
