Behind an iron shutter in Bons Aires, Pau Navarro and Ariadna Salvador run a twelve-seat show-cooking counter built around a deep list of natural wines, champagne and sherry from small growers. There is no fixed menu; lunch runs five courses, dinner eight, and the wine pairings are the reason regulars return. It is part wine bar, part chef's table, entirely personal.
Reservation only, no walk-ins, and seating is tiny. Come hungry and let them pour off-list.
