Andoni Luis Aduriz has held two Michelin stars since 2006 in a farmhouse outside Errenteria, where the menu is less a list of dishes than a sequence of provocations. Each season the kitchen rebuilds its proposal around an idea, and diners surrender to it whole. It is one of the world's most influential and divisive gastronomic experiences.
