Nikos Pouliasis's cult avant-garde kitchen, reborn at Katikies Chromata
Founded in 1989 by self-taught chef Nikos Pouliasis, Koukoumavlos built a cult reputation for reinventing Cycladic cooking through an inventive, almost painterly lens, winning Toque d'Or for years on end. In 2023 it relocated from Fira to Katikies Chromata in Imerovigli, where Pouliasis now works in collaboration with Michelin-starred chef Ettore Botrini.
One of the island's genuine auteur kitchens — Pouliasis cooks like no one else on Santorini. The 2023 move to Imerovigli added a caldera view, but the draw has always been the plate.
