Tucked down an alley beside the Ottoman-era Bezesteni market, Purovoku Project is the only Thessaloniki bar on the World's 50 Best Bars Discovery list. A zero-waste, seasonality-driven philosophy runs through everything: ingredients are grown in a rooftop greenhouse or sourced from small northern-Greek producers, then infused in-house. Expect unexpected pairings like banana with black garlic, or peach with mezcal, jalapeno and kimchi.
