The kitchen reads trattoria rather than fine-dining: a tight card of light, season-driven Italian dishes — wood-fired pizzas from the open oven, burrata salads from the antipasti line, handmade pastas, alfresco seafood mains — served on a terrace over the Aegean. The room is Mandarin's evening Italian counterweight to the Hakkasan-and-ROKA Asian programme on the same property, the booking the resort offers guests who want a quieter, less brand-heavy dinner.
