Opened in 2023 in Amsterdam-Oost by chef Raymond Plat (ex two-star 212) with the Escobar team, Troef gives French-Italian classics a refined twist alongside a wine room of over 3,000 bottles spanning established estates and natural growers. The cooking is precise, the service knowledgeable, and Gault&Millau has it at 14.5/20. A serious modern bistro.
