Kurochan extends Aret Sahakyan and the IOKI Istanbul team's Japanese-Peruvian playbook to Mandarin Oriental's main beach — sashimi cut to order, tempura that arrives without grease, robata grills sending wood smoke across the terrace, a sake list deeper than anywhere else in Bodrum. The room is dark wood and low light, with an open kitchen that doubles as theatre. Cocktails lean Japanese-floral. It is, by some distance, the peninsula's most serious sushi room.
