Andrew Wong cooks his way across the fifteen provinces of China from a corner site a minute from Victoria — Yunnan stews, Xi'an pulled noodles, Cantonese dim sum, Sichuan numbing-spice — with a research rigour that earned a second Michelin star in 2021. The Collage tasting menu is the dossier; the lunchtime dim sum and dim sum tasting are the more accessible doors. The restaurant remains, by some distance, the most ambitious Chinese cooking in the United Kingdom.
