Mabel sits behind a grilled-cheese counter on rue d'Aboukir — a small Sentier room run by Joseph Akhavan that has built one of Europe's deepest rum libraries (over 100 references, with the bartender able to walk you through them like an oenologist). The cocktails lean rum-forward but the menu spans further; the food side keeps the format honest with American-style grilled cheese (cheddar, pulled pork, turkey variants) at €6-8 alongside €13-14 cocktails. Listed in Diffords' Paris guide, on Time Out's Réaumur bars list and a 52 Martinis fixture. Quieter early-week, fills by 21:00 Thursday onward.
