Run by the Gargioli family since 1961, this tiny dining room is one of Rome's reference points for cucina romana done without compromise — carbonara, coda alla vaccinara, offal, spring lamb and a famous sour-cherry tart. The post-Tucci crowds are real, but the kitchen's pedigree and Michelin Guide standing keep it defensible. Book well ahead.
