Run by the Camerucci family from Le Marche, this is the rare central-Rome trattoria where the cooking is genuinely regional rather than generic Roman. Olive ascolane, tortello al rosso d'uovo with its yolk that breaks over the plate, game and rabbit dishes. Reservations are essential, often booked weeks out.
