Former Negresco double-starred chef Dominique Le Stanc walked away from haute cuisine in 1996 to cook the Niçoise classics he grew up on at this tiny, backless-stool room off the Cours Saleya. Pissaladière, stuffed sardines, daube, pasta al pistou and stockfish, prepared daily from the market. No telephone, cash only, reserve by stopping by the day before.
