Gürkan Tümsek runs Malva as a quiet thesis — most ingredients arrive from within fifty kilometres, the kitchen runs near zero-waste, and the menu shifts every few weeks with what the Aegean farmers and fishermen actually have. Local prawns become agnolotti with bisque; red mullet finds its way into a Marseille bouillabaisse; vegetables are treated with the seriousness usually reserved for the day's catch.
