Hodan transplants the Istanbul restaurant's chef-led identity to the open-air terrace of Avantgarde Refined on Küdür Bay, the south-facing pocket of Yalıkavak that sits a deliberate distance from the marina. Chef Çiğdem Seferoğlu — one of the small handful of women running a serious chef-led room in Türkiye — works confit gurnard with turmeric fennel, purslane-and-mint salads with nectarine, and a vegetable line treated with the same precision as the protein course.
