The board changes every morning: the Carciofa tart of ricotta, Parmigiano and artichoke sells out first, the Spacca Balle roast-beef panino is the workhorse, and the cavallo crudo with raw horse is the local rite of passage. No tables, no fuss, only a queue worth joining.
