Mr. Sedgwick was kitchen director at the Peninsula Bangkok and earlier at Tantris Munich, La Pergola Rome, La Grande Cascade Paris; the Bavarian menu reads with that pedigree underneath the schnitzel. Two cosy parlours seat 90, the banquet hall takes 300, the Augustiner-fed beer garden runs whenever the weather holds.
