A 1934 trattoria with a star and a truffle obsession
Open since 1934 and starred since 1998, Alberto Bettini's family trattoria in the Apennine hills proves a Michelin star need not mean fine dining. Tagliatelle with tomato-free ragù, tortellini in capon broth and dishes built around local Savigno truffles define the kitchen. It is arguably the least fine-dining starred room in Italy, and all the better for it.
