Ristorante Cocchi
Parma
The Parma bourgeoisie's table, carrello dei bolliti since 1925
The cradle of Italian haute cuisine, two stars in Imola
A two-Michelin-star institution where the late Gianluigi Morini reimagined Italian fine dining in the 1970s; today chef Massimiliano Mascia carries the kitchen. The almost English-style dining rooms open onto a garden square in the historic centre. Its uovo in raviolo remains one of Italy's most copied dishes, and the cellar holds rare pre-1985 labels.
The chef's table 'Saletta 22' puts you inside the kitchen. Come for the cellar as much as the cooking.
