Toru Takahashi trained at Nobu before opening this seven-seat counter on a quiet Clerkenwell side street in 2012. His wife Harumi runs the room. There is no music, no menu printed in English, no tasting course longer than your appetite — Takahashi reads the table and serves. The rice is body-temperature, the wasabi is grated to order, the tuna ages in his fridge for days. Reservations open monthly via email lottery and disappear in minutes. Once you sit, the world contracts to the cypress counter and the chef's hands. Sushi Tetsu does not appear on best-of lists because the people who eat there don't write them.
Reservations via the website on the first day of each month for the following month — set a calendar reminder. Solo and pair bookings only; no parties of three or more. Cash or card, no children under ten.
