Founded as a shellfish stall in 1742 and on Jermyn Street since 1984, Wiltons is the rare London room that does not perform tradition — it simply continues it. Oysters from the West Mersea bed, grouse from August, dover sole filleted at the table, a wine list led by claret. Jacket required, mobile phones discouraged, lunch the appointment to keep.
Lunch, not dinner. Jacket required for men — they keep loaners but it shows. Order the dover sole on the bone and a bottle of claret; let the room do the rest.
