Beirut-rooted Levantine cooking, modernised in Chueca
Dalia Nabas and Rabih Haddad moved from Beirut to Madrid in 2020 to open this small Chueca room, where seasonal Lebanese cooking keeps its heart while reading modern — multiple hummus and labneh versions, strong vegetable and pulse dishes. The space, with its wall of spice and legume jars, names itself after the Lebanese tradition of preserving food (mune). The serious Levantine table in central Madrid.
