Getaria
The temple of the whole grilled turbot.
Getaria's other great grill, with the harbour at your feet.
Two levels above Getaria's fishing port, the Argiñano family has run this grill since the 1960s, sending whole turbot, sea bream and kokotxas out over a charcoal fire fed by the day's landings. A live seafood tank and a cellar of more than 1,500 references back up the cooking, and the lower dining room looks straight onto the boats that supply it. Less mythologised than its neighbour, but the fish and the view rarely disappoint.
Request a table on the harbour-facing level and let the grill man pick the fish at its peak that day.
