Santorini's founding gastronomic landmark, now in Botrini's hands
Forty years old and still the island's reference point for Cycladic cooking, set in an 18th-century Catholic monastery courtyard in Fira. Since 2021 it has been led by Michelin-starred chef Ettore Botrini, who builds tasting menus around volcanic-soil produce and Aegean catch — red mullet with wild fennel pesto, milk-fed lamb with Tinos artichokes. The wine list is curated by Master of Wine Yiannis Karakasis.
Scored 15.5/20 at the 2026 Greek Cuisine Awards — a cooking destination first, with no caldera view to hide behind. The courtyard-and-fountain setting is the point, not a sunset.
