Julien Pilati's seasonal, organic kitchen in the former Pure & V
Chef Julien Pilati — who cooked with Ducasse, Hélène Darroze and Michel Sarran — has taken over Vanessa Massé's former Pure & V opposite the Lycée Masséna, now Pure & V par Maison Joia. The menus are seasonal, organic and almost entirely sourced from French farms, livestock and fisheries, alongside around 75 wines from independent growers. An intimate, eco-conscious table for confident eaters.
