The locals' temple of battered bacalao near Plaza Mayor
Barely changed since 1860 and the birthplace of the Spanish Socialist Party in 1879, this tiled tavern beside Sol serves the city's most famous fried bacalao and cod croquetas across a standing bar and a small back dining room. You queue, order tajadas at the counter and drink a caña amid pure old-Madrid texture. A genuine institution holding its ground in the most tourist-dense zone.
