Housed in a 17th-century Keizersgracht canal house within the Pulitzer hotel, this is one of the city's most refined cocktail rooms, telling Amsterdam's cocktail history through inventive, botanical-led drinks. Elegant, low-key and built for serious drinkers, with a four-guests-max house rule that keeps it civil. A grown-up bar, not a nightlife trap.
