Assaggio is the Italian dining room at Mandarin Oriental Bodrum on Cennet Koyu, run by Chef Fabio De Paolis since the property's opening and named Best Mediterranean and Italian Cuisine in Europe at the 2018 Haute Grandeur Global Restaurant Awards. The kitchen reads trattoria rather than fine-dining: a tight card of light, season-driven Italian dishes — wood-fired pizzas from the open oven, burrata salads from the antipasti line, handmade pastas, alfresco seafood mains — served on a terrace over the Aegean. The room is Mandarin's evening Italian counterweight to the Hakkasan-and-ROKA Asian programme on the same property, the booking the resort offers guests who want a quieter, less brand-heavy dinner. Pizza and wine workshops run during the season.
