The original Daniel et Denise on rue de Créqui, run by Meilleur Ouvrier de France Joseph Viola, is the gold standard for the upgraded bouchon. The world-champion pâté-croûte alone is worth the trip, and the quenelle, tête de veau and andouillette all carry MOF rigour without losing the convivial bistro warmth. The benchmark for what a bouchon can be at its best.
