| Ultima revisione: May 2026 Le Clarence opened in 2015 inside an 1884 private mansion at 31 avenue Franklin D. Roosevelt, owned by Domaine Clarence Dillon (Château Haut-Brion). The two-Michelin kitchen passed in late 2025 from Christophe Pelé to Andrea Capasso, who has held the rigour of the room intact — fireplaces, parquet, a wine list that draws on the Dillon estates as its spine. This is the Paris dining room that demonstrates what a wine-house-owned restaurant looks like at full conviction; the cellar alone is the reason for the booking.
