| Última revisão: May 2026 Karaburun's hillsides are a goat economy, and the municipal dairy at Eğlenhoca turned the milk into a programme: kopanisti, kelle, sepet keçi, deri tulum, höşmerim, pressed and aged on site, sold across the three Mordoğan / Karaburun / Eğlenhoca counters. Production has scaled from three to four tons of milk and from nineteen to thirty-three tons of cheese a year, but the recipes remain the village ones. The kopanisti, sharp, oily, peninsula-specific, is the bottle to bring to an Istanbul kitchen.

Mordoğan'dan Eğlenhoca'ya Karaburun halkasını sürün; Alaçatı'dan doksan dakika ama kopanistiyi kaynağında tatmanın tek yolu. Deri tulum ve sepet keçiyi birlikte alın; yarımadanın peynir tonunu birlikte örtüyorlar.
