Karaburun's hillsides are a goat economy, and the municipal dairy at Eğlenhoca turned the milk into a programme: kopanisti, kelle, sepet keçi, deri tulum, höşmerim — pressed and aged on site, sold across the three Mordoğan / Karaburun / Eğlenhoca counters. Production has scaled from three to four tons of milk and from nineteen to thirty-three tons of cheese a year, but the recipes remain the village ones. The kopanisti — sharp, oily, peninsula-specific — is the bottle to bring to an Istanbul kitchen.
Drive the Karaburun ring from Mordoğan up to Eğlenhoca — ninety minutes from Alaçatı but the only way to taste kopanisti at source. Buy the deri tulum and the sepet keçi together; they cover the peninsula's cheese register.
