Ristorante Cocchi
Parma
The Parma bourgeoisie's table, carrello dei bolliti since 1925
The carrello dei bolliti, a few steps from the Duomo
Founded in 1934 as Trattoria Belvedere and run by the Danilo family for decades, this central institution keeps the full Modenese repertoire alive. Hand-made tortellini in brodo, tagliatelle al ragu, baked lasagne and one of the city's last surviving carrello dei bolliti, the boiled-meat trolley wheeled to the table. Traditional balsamico finishes the plates.
Come hungry for the bollito misto trolley, an endangered Modenese ritual; good for groups and long lunches.
