On the quiet Piazza della Passera, Il Magazzino is the city's only proper sit-down tripperia, taking Florence's offal tradition off the street cart and onto the plate. Lampredotto, trippa and a few inventive twists are handled with real respect, in a small honest room. The destination version of a dish most visitors only meet at a kiosk.
