Open since 1872 a step from Place des Terreaux, "Les Fédés" is the benchmark against which every other bouchon is measured. Communal red-checked tables, sausage hanging from the ceiling, and a fixed menu that marches from saladiers lyonnais through quenelle and cervelle de canut without a single concession to fashion. Loud, generous, and entirely real.
