Reached through the traboule by the printing museum, Le Musée is a sincere bouchon of checked cloths, elbow-to-elbow tables and stone vaults that were once the city hall stables. Chef Quentin Delbasse continues a rigorously traditional carte of quenelle, tête de veau and saladiers. Buzzy and unpretentious, the kind of room regulars guard.
Tucked off rue de la Poulaillerie via the traboule. Closed Sunday-Monday; tight space, so book.
