Open since the 1920s near the Hôtel de Ville, Le Garet is the bouchon for people who actually want the hard classics: tête de veau, tablier de sapeur, andouillette, gras-double, all done without apology. Tightly packed tables and a regulars' hum; the wartime Resistance leader Jean Moulin used it as a meeting spot. A local kitchen, not a tourist set piece.
Closed weekends. Come for the offal canon done properly, not a gentle introduction.
