Lyon's oldest bouchon, serving in the same rooms since 1726
Maison Abel traces its table back to 1726, making this the oldest bouchon in the city. Waxed parquet, carved woodwork, vast foxed mirrors and decades of collected objects give it the air of a lived-in museum. The kitchen holds the line on the canon: handmade pike quenelle, volaille aux morilles, gratin d'écrevisses. A bourgeois bistro rather than a rowdy one.
The quenelle here is a reference version. More refined and pricier than the communal-table bouchons.
