Rafael Cagali opened Da Terra on the ground floor of the Town Hall Hotel in 2019 — a Brazilian-Italian chef trained through Quique Dacosta and Simon Rogan running a 14-course tasting menu — and held a Michelin star within seven months, the second arriving in the 2021 Guide. The cooking pulls from Cagali's two heritages — São Paulo and Tuscany — built on British produce: Cornish red mullet with mojo verde, beetroot lasagne, Iberian pork with Brazilian malagueta. The Edwardian-civic-building dining room is unusual for the register; the audience that came for The Ledbury and wants the East-London equivalent books here.
