Hidden just inside the Park Hyatt Maçka Palas lobby, The Wine Bar runs a 70-strong list that leans hard on Turkish indigenous varietals while keeping serious champagne and Old World depth. The room is calm by design, never busy, low-lit, suited to one of those long pre-dinner conversations Istanbul used to do well. Tapas-format snacks come from the Cipriani kitchen. A centennial cocktail celebrates Maçka Palas' 100 years; the bar staff actually want to talk about wine.
