Javier Rivero and Gorka Rico hold one Michelin star and a Green Star in Tolosa, reworking Basque home cooking for a modern audience without over-complicating it. The tasting menu changes every week around what trusted local suppliers bring in, and the kitchen is fully open to the small dining room. Their cheesecake has become a regional pilgrimage in itself.
