Founded in 1887 across from the old slaughterhouse, Checchino is the most serious lesson in offal-driven cucina romana you can book in Rome: coda alla vaccinara, pajata, trippa, all cooked with zero compromise. The cellar is one of the city's deepest and the dining room is elegant without a trace of snobbery. This is the institutional anchor of Testaccio's culinary identity.
