BiBi opened on North Audley Street in 2021 — Chet Sharma cooking under the JKS Restaurants umbrella that built Gymkhana, Trishna and Kitchen Table — and earned a Michelin star within twelve months. The cooking pulls from Sharma's family kitchens in Hyderabad and Punjab, filtered through a chef's CV that runs through Mugaritz, Moor Hall and the Ledbury — wood-fired venison kheema, partridge keema kaleji, the signature Kashmiri lamb chops cooked in a tandoor lined with paste from his grandmother's recipe. The wine list runs Mediterranean and orange-skin natural; the room is small, warmly lit, the audience a younger demographic than Gymkhana's. The Indian cooking the next ten years of London will be measured against.
