On Via dell'Isola delle Stinche behind Santa Croce, Vivoli has been made by the same family since 1929, surviving even the 1966 flood. Served in cups, never cones, the gelato is old-school and proudly traditional, and the affogato is a small ritual. Touristy at peak, but a real four-generation institution best visited off-hour.
