Pugi has baked Florence's bread and schiacciata since 1925, and the queue outside its Piazza San Marco forno is mostly students and locals carrying off warm, oil-glossed slabs to eat on the square. The schiacciata alla pala, plain, grape-studded in autumn, or split and filled, is the city standard against which others are judged. A working bakery, not a showpiece.
