Cumhuriyet has operated under this name since 1923 and almost certainly poured longer, hosting generations of Beyoğlu's writers and artists through every era the street has had. The case runs to around a hundred mezes a day, the ciğer and lakerda are the constants, and the fasıl is confined to the third floor so the ground floor remains a drinking-and-talking room. It sits in the middle of Balık Pazarı's tourist circus and is the exception to it. The house knows exactly what it is, which after a century is the whole point.
