This is the historic Sorbillo on Via dei Tribunali, the family house dating to 1935 and one of the genuine giants of the craft, not the look-alike windows nearby. The dough is thin-bellied with a pronounced cornicione and the Margherita is a reference point. Always heaving; come early or wait.
